    hypothetical question

Say that a couple is still legally married, but are no longer a couple, live in different states and are in relationships with other people. However every blue moon they hook up for some no strings attached fun. Would this in God's eyes be considered lust, fornication or a sin? Or is this a case of technically not violating the actual law but violating the spirit of the spirit of the law? Would God be upset with this? Any input is appreciated.

The violation of God's law would occur in their everyday lives, not the occasional hookup with their actual spouse. Would it not?

    It would.

Edit: I should clarify, I mean this in the sense everyone else means "God", which is, on observation, the Christian/Jewish/Muslim God, since religion, not God, is what is discussed here.

In the eyes of God they are not living as man and wife and therefor would be violating holy law. What you are proposing is that if they are legally married (man's law) does it change God's law. The answer is no.
