I'm going to say yes, since you can assign values and/or equations in the field. These are so powerful & customizable...I'd bet one of the MS Access groups would be able to answer this, or even have a tutorial on how to. Good Luck

If anyone finds anything on doing this in Access I would really like to see what you come up with. I have used The Card Collector and I like it, but I would like something even more customizable to my needs.

First I would like to be able to just have the players I collect, vs. having to sift through ALL the cards from a set. Also have AU/GU/RC options to check for cards, allow for serial number entry, and quick search and reports. Also I would like to be able to load a checklist and be able to separate haves and wants.

Looks like I'm on the right track with my software design. For reference, here's what Hyperlist does amongst the things you referenced:
*Keep lists with only players you collect
*have AU/GU/RC options to check for cards
*search (I call it a "sift" but it amounts the same thing) by card properties
*separate a list into haves and wants (each operation may be performed separately).
Hyperlist also has a field for entering stated print runs. The variety field could be used to enter a specific serial number entry for the card you own, although doing so has pros and cons.
The main thing Card Collector has that other desktop (as opposed to web-based) custom sports card software packages have is an extensive card database. I do not currently offer built-in card databases with my software, as I lack the time to create a database of acceptable quality. On the bright side, plain text files (and soon, CSV files) can be imported directly, so between that and the Active Card Editor getting data into the tool is pretty easy.

So you can load a custom checklist into your program as long as it is a plain text file? i.e. .txt?

Correct, a plain text file can be loaded. The program assumes that the card entries are formatted a certain way, i.e. it looks for a year followed by a brand followed by a number. Non-numerical numbers are not allowed (I've adopted Beckett's old "NNO" notatation for cards that are numbered, for example, with player's initials). Stuff entered after the number gets lumped into a "Variety/Comment" field. Most of the time, this means that card entry styles collectors are used to work they way that they expect.
