I can send you 100 base/insert cards from the last 10 or so years with as many leafs as I can for about 15$, like
If you like Belfour I can give ya a jersey card of him from calder hockey 03 for another 2$.

Most base card have like other sets not many value, but they made insert and latly they did have jersey and signature and the value goes with player name and rarity. So a nice auto from a great player can have some value. a normal insert of a regular player will not get you much.

Some people like to use beckett as a standard way of finding out the value of cards. Others use ebay to price out cards and see how much money they go for. I use both methods.

So what card companies are out there? UpperDeck, O-Pee-Chee, Donruss, but what about the others?

I just started re-collecting a few months ago but I'm pretty sure its only Upper Deck and Panini. Upperdeck bought OPC if I recall correctly and now release a set of that every year and Im pretty sure that Donruss is a part of Panini now.
Others will have to help you out but I'm pretty sure the only two companies are panini and upper deck.

When you speak of company, they are Card Manufacturer. In hockey there are card manufacturer licence by the NHL and the NHLPA:
Upper Deck
Panini
Then you have one more Hockey card manufacturer not under a licence:
In the Game.
O-Pee-Chee, Donruss are brand, they correspond to a product and a release. Panini and Upper Deck can produce only 11 brand each, so 11 release and 11 rookie card each. In all they can produce only 22 release/brand a year.
ITG, the short for In The Game produce like a little less brand/release then the other 2 but must be close.
O-Pee-Chee is a brand that Upper deck bought from Topps a few year ago. Panini bought all score and donruss brand since both used to be card manufacturer and each add a few brand.
Parkhust is a other brand and belong to Upper Deck now I think.
