She dosen't believe in meat and he is asking her to give up beliefs. It would be akin to you dating a woman and her expecting you to become a born again christian.Drug and smoke free trading.

She cooked. Sometimes there was meat, sometimes there wasn't. When there was meat, she'd either pick it out or make herself a small mean on the side. It's not rocket science. If you love someone, you'll figure it out. If you can't figure it out, you don't love that person.

That is a huge problem. He's right though. Meat exists.

I'm not saying that it can't be worked out if both are willing to compromise but what if she is "militant" in her beliefs and doesn't like the smell of it, or the thought of it being killed? This could be the case in this guy's case. Or on the other side of the coin, perhaps he sees it as a phase she is going through and is not strongly committed to it. Obviously it is causing a problem in their relationship or he wouldn't have bothered making it an issue.

Or it would be akin to her not wanting children and you wanting them. If he has a little foresight and thinks it will make the relationship short-term, what's wrong with him addressing it now?

Well, my wife isn't a vegetarian, but can't stand the smell of cooking beef. She'll eat it once it's cooked, but I'm forced to the BBQ with it, which is fine. Again, if you love each other it's not difficult in the least. If it's impossible or difficult, you don't love each other. Simple. I don't know this particular case as I don't know these people, but my point stands. If you love someone what they eat won't make a lick of difference whether she's a vegetarian or eats puppy faces.
