Each of them seem to be a bit different. The Brewers one has a list of players, coaches, and alumni who attend, and then some of the autos are $10 (current roster players), some are free (prospects and smaller name roster players), and some are 'premium' and are $25 (for the Brewers this year, they are Rollie Fingers, Ryan Braun, and Bob Uecker), and there is a lottery system for the premium autos. All of the money goes to Brewers charities, BTW. There are 6 stages on the sides of the convention center, and then in the center, there are various stages for interviews, game shows, etc. Things overlap in terms of time, so you should pick what you are most interested in and focus on that. Player x may be signing at the same time as Player y, which do you really want? They also have exhibits, interactive stages, kids baseball instructions including batting cages, sponsors, stores, etc. There are also photo booths with players. The players are walked from one area to the next at the appointed times, and don't usually sign while walking, but sign at the designated booths. The Brewers print up promo cards for each person signing, and they will always sign those. If you bring your own stuff, I have never had a player turn me down, although the fan fest documentation says that they can, of course. I find the Brewers one to be pretty well organized and although crowded, reasonably easy to navigate and accomplish my auto goals. I have heard that other teams, such as the Cubs and White Sox, are much more of a (seemingly) disorganized mess.
