My suggestion would be to start with a mediocre 2008 rookie. That way you start from the beginning of their career instead of just jumping in any time, which I think is better and gives you more of a connection to them. Defense is a good suggestion because most likely the cards will be easier to get, but some people can't get into defense as much. Here's some decent offensive players with potential to become good because, let's face it, everybody likes to see the guy they started collecting when they were a no name hit it big and his autos skyrocket!

Keenan Burton - Giants WR, 4th rd pick out of Kentucky - impressing a lot of people in preseason.
Will Franklin - KC WR, 4th rd pick out of Missouri - also very impressive in preseason and not much talent in front of him to keep him from becoming a starter.
Tashard Choice - Dallas RB, 4th rd pick out of Ga Tech - has talent, but is behind Barber and Felix Jones...but his stuff might be a little more just because he's a Cowgirl.
Matt Flynn - GB QB, 7th rd pick from LSU - he's looked a lot better than Brohm in preseason and camp, but I'm not sure how much his stuff has gone up because of that.

Or you can always find an affordable guy from your hometown, favorite college, etc. Hope that helps!

they both played all right but the coach just said that if he were to make the depth chart now brohm is 2 and flynn is 3

stanton is a decent price but his rarest cards have been going up a ton (TC 1/1 w/o an auto sold for 101) his spa stay the same so still a decent p/u especially sine once he comes back has a solid chance to start or compete for it

I would say pick a defensive player, some guy who's stuff is not to expensive and he is a solid player. Lofa Tatupu is a good pick...but there are many other guys out there too. But its up to ya. Do some more research and then decide.
