I think there's actually a bunch of Twins players that collect. I remember seeing a special on TV where a bunch of the Twins players got together to bust a few cases of Triple Threads and Exquisite. I think that was in 2006 or so but I don't remember the exact players except for Neshek.

Dimitri Young is a serious collector, to the point where (a few years ago at least) what he was acquiring was a hot topic on the PSA message boards. Highlights include the only 1969 Topps Reggie Jackson RC to receive a PSA 10.

And he was also a photographer on the 1981 Donruss set. Then again, looking back at that set, it might not be something to put on the old resume.
I'm fairly certain Billy Crystal is a big sports card collector. I know he's a memorabilia collector at least. Also, singer Eddie Money is supposed to have a monster sports card collection, but I'm not sure he would be classified as a celebrity anymore.
