Then you get a new number to chase! Changing the jersey wont change the jersey on the card.
I think both are great. Its pretty cool to be able to say you have the only one of something.

While I don't support the argument that the jersey # is a 1 of 1...when you get into that then technically every numbered card is a 1 of 1. I also don't think printing plates are 1 of 1...they are 1 of 4, they just have different colors.
That being said there is obviously a premium placed on a card numbered to a jersey number in the hobby. If you don't care about it think of this situation (I'll use my favorite card in the example). You have your choice of a 2005 Bowman Sterling Black Refractor Ryan Zimmerman...one is #10 of 25 and the other is #11 of 25. At no additional cost which do you pick?
Even the people that "don't care" wouldn't turn down taking the #11. I don't know what the premium is exactly but there is a premium.

I'd probably rather own a Garnett 21/xxx, as I don't own either a 21/xx or a 1/1, but either or would be very nice!

It really depends on the player, and the cards in question. For me, the jersey # cards hold a special place in my PC, because the first notoriety Guillaume Latendresse got was because of his jersey number (an article in Sports Illustrated, because he was the first player in NHL history to wear #84.)

I enjoy serial numbered card to a players number but that being said I would much rather have a 1/1. And I hate how on ebay if some has for example a Brett Favre card numbered 4/1000 they call it a 1/1.
