Like 30ranfordfan, I can only speak about my collection. I have always stayed away from team collecting because players come and go and once a player leaves, it's tough to move their cards because most of their market shifts as well. I'm more of a player collector and don't mind which team the player is depicted in since I am a fan of the player. With this there is also a large mixture of colours and teams which I like (especially seeing the different is Fuhr and Belfour's equipment over the years).
Another side collection I have is a retired legends PC. While I don't have much, I still like having hard signed autos, jerseys, and patches of some of the past greats. Again, it gives a great mixture of teams and in many cases it shows the players wearing their old equipment and vintage team jerseys.

It's very admirable to go the purist route like that. For my Habs it would be such a difficult thing at this point - I'd be left with only Price, Plekanec, and Halak to collect! LOL The amount of turnover these days makes it so difficult, and it doesn't help matters that it takes UD until the February releases to get the new guys with their new teams!
Habs fan and collector! Current PC's: Nick Suzuki, Cole Caufield, and Lane Hutson...., and of course...

I agree with the majority here, team collecting these days is PAINFUL. Guys come and go all the time and it sucks when you have a pile of cardboard of them.
What I personally do is just grab a few nice cards of any player I think is a LOCK to stay with my team, at least for a long time (5-7 years minimum).
For example being a LA Kings collector, last year I just grabbed about 6 or 7 cards of Doughty, and then NONE of anyone else.
No Ersberg, Purcell, Boyle, Moller, Simmonds, though I will likely grab a few of the latter two as they appear to be headed to a somewhat stable tenure in LA.
Hope that helps!
