Why so many different Rookie Cards....
and how do you know what is the best rookie card to pick up .... for example Im intrested in purchasing a Malkin RC but I have no idea which one is the actual RC. Sorry if this has been asked before but im just getting back into collecting.

Well typically a rookie card is a card that is labeled as that "Rookie" or "RC". Many sets of cards have subsets that are rookie card only... like for instance Upper Deck Series 1 has a popular set called Young Gunz those are all rookie cards.

I know what a RC is, I was just asking how do you tell which Malkin is his "actual" RC?

What I am trying to say is that there are multiple rookie cards.. there is not just one.

The card will typically be labeled with the word Rookie on it.. here is a checklist for you to help in your search.
